The holidays is my favorite time of year because I have certain bake goods I only make during Christmas and New Year's. These delicious delectable of cakes, cookies and custards are a must every year. My chewy oatmeal pumpkin spice cookies are a hit with my family and friends and I am sharing it with you today.

Oatmeal Pumpkin Spice Cookies
Ingredients:
1 cups of unbleached flour
1 teaspoon of ground cinnamon
1 teaspoon of pumpkin spice
1/2 teaspoon of salt
1/4 teaspoon of baking soda
1/4 teaspoon of baking powder
1 1/2 cups of packed light brown sugar
1/2 cup of butter softened
1 eggs
1 teaspoon of vanilla
1/2 cup of solid pack pumpkin
2 1/2 cups of uncooked old fashioned oats
1/2 cup of Nature's Path Organic Honey Almond or any granola
1 cups of dried raisins or cranberries
- Preheat the oven to 350. Than lightly butter a cookie sheet and line with parchment paper. The butter helps to keep the parchment paper in place.
- Sift all the dry ingredients - flour, cinnamon, salt, pumpkin spice, baking soda, baking powder and place in a medium bowl. Set aside
- Beat the brown sugar and softened butter on medium speed for 5 minutes till fluffy.
- Next, beat in the eggs and vanilla till blended, then add the pumpkin and beat on low till blended.
- Take the flour mixture and beat into the wet ingredients till blended. Then add the oats, honey almond granola and stir well.
- Toss in your raisins or cranberries and stir well.
- Using a tablespoon, scoop the cookie dough and drop 2 inches apart on the cookie sheet. Bake for 14 minute total, however 7 minutes through the baking process, turn the cookie sheet around so the cookies can brown evenly.
- Once golden brown, remove cookies from the oven and wait 2 minutes before transferring them to a wire rack.
